Before following his dream to be a chef, Amuseables Rene Waffle was a cabbie, cruising effortlessly through the backstreets of New York City.

Those same navigation skills – and sweet charm – means he really knows his way around the NYC Diner’s bustling kitchen (and its customers). He's on the go all day: prepping, poaching, plating up... And he loves it.
